These Vegan Pink Ombre crepes are a delicious way to start the day.
VEGAN PINK OMBRE CREPES (this recipe makes 6 large crepes - 26 cm diameter).
150 g all-purpose flour
2 tbsp unrefined cane sugar
1/8 tsp salt
360 ml plant-based milk
1 tsp vanilla extract
1 tbsp melted coconut oil
Combine flour, salt, and sugar in a large mixing bowl. After brief whisking, add the milk, coconut oil, and vanilla extract. To combine all of the ingredients, whisk them together. Allow 5 minutes for the batter to rest. Start cooking your crepes in a nonstick pan (mine was 26 cm in diameter). After the initial crepe, add about 1/8 teaspoon pink pitaya powder to the batter, one crepe at a time until the batter is gone. If necessary, brush the pan with coconut oil after each crepe.
