🍓Vegan Mini Strawberry Cheesecakes

Vegan strawberry cheesecake

Crust:
1/4 cup pecans
1/6 cup almonds
1/3 cup oats
8 pitted Medjool dates
1 tbsp almond butter
1/2 tbsp water

Mix everything in a food processor until sticky. Put on the bottom of silicone muffin molds, press firmly, and refrigerate 30 min

Cheesecake:
170 g cashews
1 can coconut milk
2 tbsp shredded coconut
1 tbsp maple syrup
Juice 1/2 lemon
3g Agar powder





Boil cashews for 15 min and drain. Add them to a blender with the other ingredients except for the agar. Boil 70 ml water, add in the agar, and whisk for 2 min. Add this to the blender and blend everything until smooth.
Use 2/3 of the blended mixture to fill the muffin molds to 2/3 of their height. Place them back in the fridge to set 10 min

Strawberry layer:
235 g strawberries

Meanwhile, blend the strawberry with the remaining mixture. Pour this new mixture on top of the cheesecakes, refrigerate for at least 2 hrs to set. Style with strawberry.
