How to prepare potato soup?

This simple Potato Soup recipe is delicious! the good part is that it is It's quick and simple to make. You still maintain the nice creamy, soothing, warm and delicious taste without the use of heavy cream.

POTATO SOUP RECIPE

You'll need the following ingredients to prepare this simple potato soup recipe:

Bacon: To keep it a little leaner, I recommend using centre-cut bacon. However, any type of bacon will suffice. For added flavour, we'll sauté the vegetables in the residual fat (or butter, if you like). However, if you want to make this soup vegetarian, check my suggestions for a fantastic meatless version below.

Vegetables: Onion and garlic
Flour: To thicken the soup, we'll make a roux with flour. You can also omit this step and only purée a portion of the soup to thicken it if you like a lighter soup.

Our soup's broth will be made with chicken stock and milk. You can use chicken or vegetable stock, as well as any type of milk.

Potatoes: I highly recommend using buttery Yukon gold potatoes in this soup. However, russets or red potatoes would do.

For optimal flavour, I recommend using good sharp cheddar cheese.

To make the soup extra creamy, use Greek yoghurt or sour cream.

Salt and pepper: Season your soup to taste with as much as you need at the end.

TO MAKE POTATO SOUP, FOLLOW THESE INSTRUCTIONS:

Simply follow these steps to prepare this potato soup recipe:

Prepare the bacon. Chop it up and cook it in a large stockpot till it's nice and crispy. Transfer the bacon to a plate lined with paper towels, reserving a few tablespoons of the remaining fat in the stockpot (discarding the rest.)

Sauté the veggies. Sauté the garlic and onion in the bacon grease until they are soft, stir very well in the flour to create your roux.

Add the potatoes and stock to the pot. The stock, milk, and potatoes are then added. Cook until the potatoes are softened, stirring frequently to prevent the bottom of the soup from burning.

Mix in the remaining ingredients. Then add the cheese, Greek yoghurt (or sour cream), and crispy bacon bits and whisk to combine. Season the soup to taste by adding salt and pepper.
Warm the dish before serving. Then top it with all of your favourite toppings and serve!
