1 medium-sized zucchini • 1 can wild-caught tuna • 2 tbsp. avocado oil mayo (or greek yoghurt) • 1-2 tbsp. chopped red onion • 1 tbsp. chopped parsley • 1/2 cup cheddar cheese, shredded • pinch of salt + pepper • sliced jalapeƱosfor garnish

Preheat the oven to 350°F. 2) Slice zucchini in half lengthwise and hollow out the middle. 3) In a small bowl, combine the tuna, mayo (or Greek yogurt), red onion, and parsley; mix well. 4) Fill zucchini halves with the tuna mixture and top with cheddar.
