How to make the perfect peach pie ice cream bars

1 tbsp flax seed, ground

3 tablespoons of water

2 cups oats, rolled

a third cup of almond butter

a third cup of maple syrup

1 teaspoon extract de Vanille

a half teaspoon of cinnamon

a half teaspoon of salt

Peach ice cream
2 cups peaches, frozen
2 bananas, frozen
1/4 cup coconut milk (full fat) from a can
1 tablespoon of maple syrup
Lime juice (half a lime) (about 1 tbsp)
1 thinly sliced fresh peach

Combine the water and ground flax in a bowl to make your flax egg.
Add the base ingredients to a food processor and pulse until the mixture starts to stick together like a dough. Place your dough on a parchment-lined baking tray and lightly press flat with slightly damp palms or the back of a big spoon to form a base. In a food processor, puree the peaches, bananas, maple syrup, lime juice, and coconut milk until completely smooth and creamy. 

Scoop and smooth your ice cream layer on top of the base. To finish, scatter some thinly sliced fresh ripe peaches and coconut flakes on top. Freeze your dish for at least three hours, or until the ice cream is hard. Remove the tray from the freezer and let it aside to defrost for 5 to 10 minutes. Carefully pull the dessert out of the tray using the parchment paper, then cut the block into 9 equal squares with a sharp knife and dish.
