How to make healthy cinnamon roll muffins


HEALTHY CINNAMON ROLL MUFFINS

Bananas will give these muffins an incredible 𝗺𝗼𝗶𝘀𝘁 𝗮𝗻𝗱 𝗰𝗵𝗲𝘄𝘆 texture, but without compromising the very expected 𝗰𝗶𝗻𝗻𝗮𝗺𝗼𝗻 𝗿𝗼𝗹𝗹 𝘁𝗮𝘀𝘁𝗲. ⁣⁣

Recipe by Anita.⁣
𝗥𝗲𝗰𝗶𝗽𝗲 for 10-12 muffins (gluten/dairy/refined sugar-free)
* 2 bananas
* 1/4 cup maple syrup
* 1/4 cup sunflower oil
* 2 eggs
* 1/3 cup plant-based milk
* 1 1/3 cup rice flour
* 2/3 cup oat flour
* 1 tsp vanilla extract
* 1 tsp baking powder
* 1/2 tsp cinnamon
For the cinnamon swirl:
* 2 tbsp coconut sugar
* 1 tbsp cinnamon




Process
Preheat oven to 180°C (350 F) and line a muffin pan with parchment liners.
In a mixing bowl, whisk all wet ingredients until combined. Add in the dry ingredients and stir with a wooden spoon. Divide the batter evenly between the muffin cups, filling each cup 1/2 way to the top. Sprinkle 1/2 tsp of the cinnamon swirl mixture and then top the muffin with the remaining batter. Sprinkle an extra dash of the cinnamon mixture on a top muffin. Bake for 20-25 minutes. Enjoy!
